The Healthy Side Of Chicken Taquitos

Given that today is Cinco de Mayo, and several of you will start your weekend with drinks and tacos. It feels only right to give you a taquito recipe that goes great with any Corona or margarita. Best of all, these taquitos are on the healthy side because they are baked instead of fried.

What I loved most about the recipe is being able to cook them in bulk. Since you will be baking these taquitos in the oven you can load up your sheet pan with an entire batch rather than fry a few of them at a time.

You are more than welcome to braise chicken, shred it and use it in your tacos or you can save some time by using rotisserie chicken. Feel free top with guacamoleĀ or your favorite salsa fresco or both.
